Our Mother’s Armenian Potato Salad

DIRECTIONS:

  • Boil potatoes until soft. One, large potato is enough for two people

  • Place into cold water bath

  • Peels will come right off

  • Then cut into cubes

ADD INGREDIENTS:

  • ½ chopped onion

  • ½ bunch finely chopped parsley

  • ½ cup olive oil

  • ¼ cup white vinegar

  • ¼ cup lemon juice

  • Salt, pepper to taste

  • Refrigerate until ready to serve – tastes better when it has time to marinate (a couple of hours, or overnight)
